Coconut pudding

 

preparation time:

ca. 15 minutes

difficulty:

simple

ingredients for 4 portions:

500 ml coconut milk
3 tbsp. sugar (or more if you like) – maybe you want to try coconut sugar, it is more nutritious than regular sugar
3 heaped tbsp. starch, e.g. cornstarch

preparation:

Take a cup of coconut milk, add sugar and starch to it. Warm up the rest of the coconut milk in a pot until it boils.

When boiling, add the sugar-milk-starch-mix to the hot coconut milk and stir. Let it boil up again. Fill in cold bowls and leave it to cool down.

tip:

Grated coconut is great to garnish your pudding.
