Veggie Burgers

preparation time:

ca. 30 minutes



ingredients for 4 people:

1 zucchini or 4 broccoli florettes
5 carrots
4 potatoes
1 spring onion
1 egg (yolk)
ca. 50 g oatmeal
3 tbsp. spelt flour
2 garlic cloves
a little parsley
salt and pepper and other spices/herbs one likes and tolerates
oil one tolerates (for frying)


Clean, peel and cut/grate the vegetables. Mix everything – except ca. 20 g of oatmeal, oil and parsley – to a dough. Form burgers from the dough. Roll them in the remaining oatmeal to get a nice crackling. Maybe you’ll need to use an additional egg yolk for that.

Heat the oil in the pan and fry the burgers from both sides.

Garnish the burgers with parsley and serve with salad or rice or millet.


If you would like to add a topping – since tomato sauce does not work – you can use a little maple syrup or cream cheese.

    When do you add the oatmeal? Method says Mix everything – except ca. 20 g of oatmeal form the 50g
    but doesn’t mention what you have to do with the remaining 20g of oatmeal after that step.
